Makes 1 bulb (about 8 to 10 cloves) roasted garlic
This roasted garlic makes a perfect condiment for spreading on bread, sandwiches, salads, and pizzas. Add to boost flavors of dips and spreads. Also beat into softened butter or oil to roast/grill veggies or meats.
Oven Roasted Garlic
1 bulb (about 8 to 10 cloves) garlic
2 sprigs (about 3" each) fresh thyme
3 fresh basil leaves
1 Tbsp extra virgin olive oil
Pinch sea salt
Pinch black pepper
Directions:
Preheat oven to 400F degrees.
Take the garlic bulb, and cut off about 1/4" off the top, exposing some of the cloves of garlic. Leave the cloves attached to the root.
Take about an 8" square piece of aluminum foil and place the prepped garlic clove in the center, root side down. Loosely crimp the foil up the side of the garlic leaving the top opened. Be sure there are no tears in the side or bottom of the foil. Place the sprigs of thyme and basil leaves in with the garlic. Pour the 1 Tbsp of olive oil over the garlic and herbs. Sprinkle lightly with a pinch or two of salt and pepper.
Seal the top of the foil and place the garlic bundle on a small pan to catch any leaks. Bake for about 40 to 50 minutes, until the garlic is soft when tested with the tip of a knife.
Remove from oven and allow to cool slightly. Use as desired.
