Pickled Shallots

Perfect condiment for burgers, poached fish, grilled chicken, and sandwiches. These will keep in a tightly sealed jar for several weeks.


1 cup white distilled vinegar

3/4 cup granulated sugar

1 tsp kosher salt


1 lb thinly sliced shallots


Directions:

In a medium sauce pan, heat the vinegar, sugar, and salt, until dissolved and boiling. Add the sliced shallots. Transfer the shallots into a heat proof jar and seal. Chill for at least 2 hours before using. The flavor is better the longer they marinate.


Keep chilled. Use as desired.
