This Spicy Tomato & Cherry Pepper Spread is bursting with delicious ripe tomato, garlic, and olive oil. Those classic flavors are further illuminated by the umami punch of the hot and briny cherry peppers.
In the Mediterranean, stale bread is almost never wasted. The most obvious use is bread crumbs. But the not-so-obvious use is mixing them in non-dairy spreads to develop a nutty but creamy consistency. The more complex the flavor of stale bread, the more complex the flavor of the spread or dip. Wheat breads and rye breads make the best flavor companions. Don't fret, however, if you don't have any stale bread on hand. You can easily substitute broken wheat crackers.
Serve this spread over meat, pizza, pasta, or flatbread.

Spicy Tomato & Cherry Pepper Spread
5 oz grape tomatoes, chopped
1 oz sweet-pickled hot cherry peppers
3 oz stale crusty bread crumbs or wheat crackers (made by pulsing stale bread in a food processor)
1 small garlic clove, minced
6 Tbsp. extra virgin olive oil
Salt and pepper to taste
Garnishing 1 Tbsp olive oil
1 Tbsp chopped grape tomatoes
Directions:
In a small food processor or a mortar and pestle, process tomatoes, cherry peppers, stale bread crumbs, and minced garlic.
Drizzle in olive oil while processing until becomes creamy and fairly smooth. Salt and pepper to taste.
Transfer into serving bowls. Swirl in chopped tomatoes and olive oil immediately before serving.
